Fudge Meltaways
1/2 c. marg
1 sq unsweetened choc (1 oz)
1/4 c sugar
1 tsp vanilla
1 egg, beaten
2 c graham cracker crumbs
1 c. coconut
1/2 c. ch nuts (optional)
1/4 c. marg
1 tb milk
2 c. powd. sugar
1 tsp vanilla
1 1/2 sq. unsweetened choc (1 1/2 oz)
Melt 1/2 c. marg and 1 sq. chocolate in saucepan. Blend granulated sugar, 1 tsp vanilla, egg, crumbs, coconut, and nuts into butter-chocolate mixture. Mix well and press into ungreased baking dish (11x7) or 9" square (or whatever you can find). Refrigerate.
Mix 1/4 c. marg, milk, powd sugar, and 1 tsp vanilla. Spread over crumb mixture. Chill.
Melt 1 1/2 sq chocolate and spread over chilled filling. Chill.
Cut before firm. Makes 3-4 dozen squares.

I remember always sneaking those out of the fridge while they were still cooling. Yummm, that's when they taste best, cool on the outside still hot in the middle.

I think these are my ultimate favorite dessert. I don't know but what I might make them for a party tonight.
One thing I also love is that Mom got us into stir fry and tofu at a young age. I guess because of the Japanese students. And we always used chopsticks, even after they were gone. They were always in that drawer in the china cabinet. I still always ask for chopsticks at Asian food places, even like Panda Express. And I tell people how I started using them when I was a kid. Another gold start for Mom and making memories for us!
Yes that is s good one a healthy one. My kids love to try w/ chopsticks I need to let them try more. I need to make stirfry more too.
That was Amy actually. She was staying here watching my kids while Dana and I got a night away for our anniversary! (11 yrs)She's the best! Just wanted to give her the credit of teaching her kids about chopsticks. I don't know if my kids have ever used them or not. They'd probably love to try that sometime.
